Pumpkin Pancakes

Easy Fluffy Pumpkin Pancakes

Found this recipe yesterday and all though I will admit it sounds like something to make this fall or around Halloween I had to at least try and make them since I had all the ingredients in the house and I'm pregnant so it sounded amazing lol

So let's get started

Ingredients


  • 3 cups buttermilk pancake mix(the kind you just add water to)
  • 2 cups cold water
  • 2/3 cups canned pumpkin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger             


Instructions

1. In a medium/large bowl, whisk all the ingredients until just blended (batter should have lumps). Spray heavy griddle or skillet with nonstick spray and heat over medium heat. Spoon 2 tablespoon (I did 1/4 cup) batter unto griddle/skillet to form each pancake. Cook until edges are drying and bubbles start to pop, turn and cook a few minutes longer . Serve with lots of butter and maple syrup or pumpkin syrup

Pumpkin Maple syrup

Combine together the following ingredients
1 cup maple syrup
1 1/4 cup pumpkin
1/4 tsp cinnamon



Now go an enjoy some pumpkin pancakes of your own lol

Halfway there


20 Weeks Pregnant with Cupcake



How far along? 20 weeks 1 day! I am officially halfway there!
Total weight gain: ? No scale in house
Maternity clothes? Yes
Stretch marks? No 
Sleep: I know I'm staying up too late and I wake up  3-4 times through out the night  to use the restroom or to get a drink of water
Best moment this week: knowing I'm halfway to meeting our Cupcake
Miss anything?  Nope
Movement: Yes - I feel movement on a daily basis now although it's still quite light and nothing too strong...no big kicks yet!
Food cravings: Nope, but I have been really hungry this week
Anything making you queasy or sick: Not really
Labour signs: No.
Symptoms: Bigger boobs LOL hormonal acne,
Belly button in or out? Out

Happy or moody most of the time: Happy!
Looking forward to: Shopping for our little Cupcake

My day

Well pretty boring day went through some baby clothes someone sent me to see what I wanted ,I been thinking about names for the little cupcake baking in my belly right now I like Zoey Lynn but until I am positive on what we are going to name her she is just going to be cupcake . Yesterday got my second shot from my in home nurse . The shots I'm getting are to keep me from going into early labor, because with my daughter lou lou she was born 6 weeks early . So we don't want no early baby this time around we want health happy baby .I am going to do a Instagram July photo challenge I will post the list at the end of the post.
I think I'm going to do sort of a pregnancy blog/journal till cupcake(baby) makes her grand entrances

How far along I am:
19 weeks and 7 days

Total weight gain: ? No scale in house I started with a pre-pregnancy weight was 108 last doctor vist 119

Maternity clothes?  Yes mainly pants 


Best moment this week: Finding out the gender of the baby an that we were having another girl 


Miss anything? U mm.... not really      

Movement: Yes!! I do feel cupcake moving , I think I have for a little while, I hope its cupcake and not strong gas bubbles LOL eww .

Food cravings: not really sweet stuff Ice cream

Anything making you queasy or sick: not really 



Labor signs: No.
Symptoms: hormonal acne, pregnancy nose 

Belly button in or out? Out

Happy or moody most of the time: happy,and tried if that's a mood


Looking forward to: My next doctor's appointment!

Wow

Well im back sorry ive been MIA forever guys but ive been gone almost a year wow, but im back now im a stay at home mommy agian im am no longer a cashier at Priceless foods and I have some excting news... ... I am pregnate with my second baby and its another girl I am 19 weeks along so exicted to be a mommy to another little girl my other girly lou lou is five and going to be six in Nov oh yea and baby girl is Due Nov 17 also lou lou will be going to kindergraten this Fall grow up so fast here are some pictures enjoy big hugs from my house to yours Jamie

Happy Belated 4th of July


 
 
Happy late 4th of July sorry been MIA lately but if been a busy little bee lately and not been near a computer to work on my blog in a long time but I promise I am here . Today I am going share with you a recipe I did for Fourth of July Its called a Cherry pie cake I will put a link to were I got this idea as I must give credit to were it is given. First off what says more American than cherry pie Yumm
 
 
How to Make Cherry Pie Cake
 
 
 
What you need:
(2) 7" Cherry pies ~ store bought or handmade (recipe below)
(2) 9" cake pans

(2) boxes of white cake mix
(2) containers of fresh blueberries

Frosting (recipe below) 
 
 
 
 
 
First thing first - you need to bake your cherry pies. Now you can either make them from scratch (recipe below) or buy frozen cherry pies (and let completely defrost) or buy freshly made store bought pies (at room temperature).
 
 
Whatever pies you choose, they need to be cooked and at room temp. and they should be no more than 7 1/2" wide so they fit in the 9" cake pan. This is important stuff!
 
 
 
 
Now your pies are done and sitting on your counter at room temperature. Now make your first batch of white cake mix. Do not combine two mixes because the cake batter should not sit out while you take your sweet-ass time. Spray and flour your first 9" cake pan and pour about 3/4" of cake batter into the bottom of your pan.
 
 
 
 
 
Place your first pie in the middle of the cake mix. Make sure you take the pie out of the tin.
 
 
 
 
 
 
Pour the rest of the cake batter over the pie. You are going to use almost all of your cake batter. ALMOST all of it. It should about a 1/4" - 1/2" away from the top of the pan. You do not want the cake to cook up and over the cake pan. Bake at 350 degrees for 1 hour. It takes a while because the center of the cake takes literally forever to bake. Check your cake from 45 minutes on to make sure it's still baking and not getting too brown. It should be done between 50 minutes and 60 minutes. Make sure you use the middle rack so the top down not get too brown.
 
 
 
 
 
 
 
 
 
Let completely cool before removing it from the pan. If you have not already baked your second pie-cake you should do so now. There's a pie in there! Cool huh?
 
Once your cakes are totally cool you can frost your first layer. These cakes are super heavy so lay your cake on the platter you plan to serve with. Frost the cake with a thin crumb layer. You will frost again once the second cake is on. Make sure you have an extra thick layer on top of the cake as this will show in between your cakes when you slice.
 
 
 
Add your second layer ... carefully. These babies are heavy.
Now frost this layer too.
 
 
 
 

Now frost everything together and start adding your clean blueberries all along the edge.




 
 
 
Continue spiraling the blueberries towards the middle until the cake is Beautiful
 
Fourth of July Cherry Pie Cake
Cherry Pie Ingredients
(Recipe is for 1 pie ~ double for the 2 layer cake above)

1 recipe pastry for a 7 inch double crust pie (Can find in the frozen aisle or handmake) 
4 tablespoons quick-cooking tapioca
1/8 teaspoon salt
1 cup white sugar
4 cups pitted cherries
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1 1/2 tablespoons butter
Directions for Cherry Pie
1. Preheat oven to 400 degrees F (205 degrees C). Place bottom crust in pie pan. Set top crust aside, covered.
2. Roll out half the crust and line a 7-inch pie pan. Refrigerate until needed. Roll out the top crust and set aside.
3. In a large mixing bowl combine tapioca, salt, sugar, cherries, and extracts. Let stand 15 minutes.
4. Turn out into bottom crust and dot with butter. Cover with top crust, flute edges and cut vents in top.
5. Place pie on a foil-lined cookie sheet--in case it drips.
6. Par-bake for 30 minutes in the preheated oven. Let cool. NOTE this is not fully cooked. You now need to prepare your cake batter. If you are using a completely cooked pie that is totally OK!
White Cake Mix - 2 boxes
Follow the recipe on the back of the box.
 
Vanilla Buttercream Frosting Ingredients
9 cups confectioners' sugar
3 cups butter
3 teaspoon vanilla extract
5 or 6 tablespoons whipping cream
 
Directions
1. In a stand mixer fitted with a whisk attachment, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
 
2. Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
 
My Cherry pie cake turned out wonderful better than I thought it would and trust me I am not cake decorator, I also only use one pie in one pie instead of 2 and , when I did the crump layer of icing I put it in the fridge for a few minutes not to long to get a little hard to help with the full covering of icing . Hop that you try and make this it is so yummy :)

Happy Valentines Day

Tuesday after I got off work I went out to eat with two good friends at Hacienda I had fun and ate some good food , Hope we can do it again soon : )

 
Then Wednesday we went out to eat  at this place ^ LOL
